  • 2 tbsp light soy sauce
  • 2 tbsp Shaoxing wine
  • 2 tbsp rock sugar
  • 2 tbsp ginger, minced
  • 4 cloves garlic, minced
  • 200g preserved vegetables (dong cai)
  • 1 litre water
  • 2 tbsp vegetable oil
  • Spring onions, to garnish

How To Cook Traditional Pork Belly with Preserved Veg

Step 1

In a large pot, heat up the vegetable oil over medium-high heat. Add in the ginger and garlic, and stir-fry until fragrant.

Add the pork belly and stir-fry until browned on all sides.

Add in the dark soy sauce, light soy sauce, Shaoxing wine and rock sugar. Stir to combine.

Step 4

Add in the preserved vegetables and stir-fry for another 2-3 minutes.

Step 5

Add in the water and bring the mixture to a boil. Reduce the heat to low and let it simmer for 2.5 hours, stirring occasionally.

Step 6

After 2.5 hours, remove the pork belly from the pot and place it on a plate. Strain the sauce and pour it over the pork belly.

Step 7

Garnish with chopped spring onions and serve with steamed rice.
