  • 1 teaspoon of sesame oil

  • 1 tablespoon of oyster sauce

How To Cook Steam Kampong Chicken (Half)

Step 1 

Prepare the chicken

  1. Clean the chicken and trim off any excess fat.
  2. Rub the chicken with salt and sesame oil, making sure to coat it evenly.
  3. Set aside for 10-15 minutes.

Step 2 

Prepare the steamer

  1. Fill a large pot with water and bring it to a boil.
  2. Place a steaming rack in the pot.
  3. Add the pandan leaves, ginger, garlic, and spring onions to the water.

Step 3 

Steam the chicken

  1. Place the chicken on the steaming rack, breast side up.
  2. Cover the pot with a lid and steam the chicken for 30 minutes.
  3. After 30 minutes, check the chicken by inserting a skewer into the thickest part of the meat. If the juices run clear, the chicken is done. If the juices are pink or red, steam for another 5-10 minutes.
  4. Remove the chicken from the steamer and let it rest for 5 minutes before cutting it into pieces.

  1. In a small saucepan, heat the vegetable oil over medium heat.
  2. Add the Shaoxing wine, light soy sauce, oyster sauce, and white pepper. Stir well.
  3. Bring the sauce to a boil and let it simmer for 1-2 minutes.

Step 5 

Serve the chicken

  1. Place the chicken on a serving platter.
  2. Pour the sauce over the chicken.
  3. Garnish with spring onions and serve hot.
