Ingredients:

  • 500g squid, cleaned and sliced into rings
  • 100g cashew nuts
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • 1 red chilli, sliced
  • 3 spring onions, sliced
  • 1 tablespoon Sichuan peppercorns
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • Salt, to taste
  • Fresh coriander leaves, for garnish

How To Cook Gongbao Sotong with Cashew 

Step 1

In a wok or large frying pan, heat the vegetable oil over medium-high heat. Add the minced garlic, ginger, and sliced chilli. Stir-fry for a minute until fragrant.

Step 2

Add the Sichuan peppercorns to the pan and continue stir-frying for another minute until they release their aroma. Be careful not to burn them.

Step 3

Increase the heat to high and add the squid rings to the pan. Stir-fry for about 2-3 minutes until they turn opaque and start to curl. Remove the squid from the pan and set aside.

Step 4

In the same pan, add the cashew nuts and stir-fry for a couple of minutes until they turn golden brown. Remove them from the pan and set aside.

Step 5

Reduce the heat to medium and add the soy sauce, rice vinegar, sugar, and a pinch of salt to the pan. Stir well to combine the ingredients and let the sauce simmer for a minute.
